But it’s much more complex than other aged bottles: It’s made via the traditional solera aging process, or when small amounts of finished vinegar is left in each oak barrel after draining to “seed” the next batch. (Sort of like a sourdough starter, but for vinegar.) This solera system is 25 years old, which means that every bottle carries a quarter century’s worth of history and complexity.
